Charcuterie is the French word for cured pork. A true, French, charcuterie board is cured pork (later adapted to include a variety of cured meats) on a plate or board, sometimes served with a few cornichon or small bits of cheese to go with.
American charcuterie is typically "whatever goes" and can be all cheese, equal parts meat and cheese, or not contain any meat. It's also used to reference food combined and arranged in the style of American cheese boards, with everything curated together.
Cheeseboards, charcuterie, and grazing or snack boards are used synonymously in the US. They've been used long enough, and often enough that it has become a distinct part of our vernacular. Even for people who don't like the way Americans use charcuterie it's here to stay.
